Give all ingredients a good wash. Some people may have skin sensitivities (i.e. itchy skin) to Wai San (Chinese Root), we suggest putting on gloves if you might be sensitive.
Cut off the top and bottom tip of the carrot and the Wai San, and then peel the skin. Give the PaiSan a quick rinse after you peel it.
Peel the Apple and remove the root.
Use scissors or a knife to cut the dates open to remove the core.
Fill a big pot with 15 cups of water and bring to boil.
While the water is warming up, cut up all the ingredient into cube size pieces.
Add all ingredients into the big pot of water. (Water does not need to reach boiling water when adding the ingredients)
When the water is boiling, you can bring the heat down to low-med heat.
Boil for one and a half hour.
All done! You can drink the soup alone or eat all the yummy and nutritious food inside the soup! This soup is a great drink for kids and adults alike.
You can store leftover soup in the refrigerator for up to 2 days.
